Mediterranean eggplants with basmati rice πŸ†πŸš

I had an enormous spherical eggplant from Italy in my fridge and I wanted to make one thing particular with it.

Substances:
πŸ† 300 g. eggplant
πŸ† four champignons
πŸ† 6 cherry tomatoes
πŸ† Mediterranean herbs
πŸ† three tbsp olive oil
πŸ† Chilly
πŸ† 5 cm Tomato paste
πŸ† 1 inexperienced onion
πŸ† 2 garlic cloves
πŸ† Salt
πŸ† 200 g. boiled basmati rice

🍚 Chop the greens
🍚 Depart the eggplant slices in a plate with some salt, to empty from their liquid
🍚 In a pan put oil, chilly, tomato paste, the chopped inexperienced onion, garlic. Fry for five min.
🍚 Clear the eggplant slices with some paper towel and add them with all greens and the herbs within the pan. Combine now and again. Cook dinner for 15 to 20 min.
🍚 Serve with the basmati rice
