Smothered Veggie Burrito
Wholesome Mexican consolation meals that’s loaded with veggies , beans and smothered with enchilada sauce and topped with cheese!! This recipe is a simple weeknight meal that everybody will love and belief me it tastes higher than from a restaurant!!

—INGREDIENTS—
* 2 Tbsp olive oil
* 1 small Vidalia or white onion, sliced
* 1 Tbsp garlic
* 1-2 jalapeño, sliced
* Purple & Inexperienced bell pepper, sliced
* 1 zucchini, sliced
* 1 yellow squash, sliced
* 1 cup broccoli florets
* 1.5 cup child spinach
* 1 tbsp packet taco seasoning
* 1 tsp Purple chili powder
* 16 ozrefried beans can, drained
* 2 tsp texaspetesauces sizzling sauce
* 19 ozred enchilada sauce can
* 6 giant flour tortillas (10-inch, burrito measurement)
* 1 half cups Mexican shredded
* 1/Four cup cilantro, some for garnishing

—INSTRUCTIONS—
* To a big skillet, add olive oil, onion, jalapeño and prepare dinner over medium-high warmth for couple min. Add peppers, broccoli, zucchini, squash, garlic and salt & pepper.
* Prepare dinner for 7-Eight min whereas stirring constantly. Add beans, spinach and chopped cilantro. Add the taco seasoning, purple chili powder and texaspetesauces sizzling sauce and stir to mix and prepare dinner for 2-Four minutes then flip off the warmth and put aside.
* Lay tortillas on the plate, unfold spoonful filled with enchilada sauce everywhere in the tortillas. Evenly high with the veggies & bean combination down the middle, and evenly distribute cheese down the middle of every tortilla.
* Wrap the tortilla right into a burrito; high the burrito with ladle filled with enchilada sauce, and sprinkle cheese. Place the plate in a Microwave and prepare dinner for two minutes or till the cheese is melted.
* Garnish with cilantro, lettuce and pico de gallo and serve instantly!!
