St. Patrick’s Day Particular 🍀
This afternoon, after my Irish buddy Robin despatched me a few humorous St. Patrick’s Day movies, I spotted, immediately is St. Patrick’s day 😃💚
All enthusiastic about this discovery, I made a decision we needed to have a good time with an Irish dinner tonight. 🎉🍀
My alternative fell on a Vegan Colcannon Soup and Soda Bread 🌱🧚♂️
Vegan Colcannon Soup
🧚♂️2 TB olive oil
🧚♂️1 small onion chopped
🧚♂️Three cloves garlic minced
🧚♂️Three cups vegetable broth
🧚♂️2 cups potatoes peeled and chopped into bite-size items
🧚♂️half of tsp salt
🧚♂️half of tsp pepper
🧚♂️1.5 cups kale stems eliminated and chopped
🧚♂️half of cup cashews soaked in sizzling water for 10 minutes, then rinsed
🧚♂️half of cup water
🧚♂️Scallions for topping
🌱Warmth oil in massive pot. Add onions and garlic and prepare dinner till onions are translucent (3-5 minutes).
🌱Add vegetable broth, potatoes, salt and pepper to pot and prepare dinner coated on medium till potatoes are totally cooked and are beginning to break aside (about 20 minutes).
🌱Whereas the potatoes are cooking, add cashews and water to a high-speed blender* and mix till clean.
